A creamy, winter-friendly soup where sweet parsnips and tart apples meet the deep umami notes of Basli caramelised onion relish.
Ingredients:
3 large parsnips, peeled and chopped
1 small apple, peeled and chopped
1 small onion, chopped
2 tbsp Basli red onion & chilli relish
1litre vegetable broth
1 clove garlic, minced
100ml heavy cream
½ tsp ground cumin
1 tbsp olive oil
Salt & pepper
Toasted walnuts & thyme for garnish
Instructions:
Sauté onion and garlic until soft.
Add parsnips, apple, and cumin, and cook for 2 minutes.
Pour in the broth, add salt & pepper and simmer until tender.
Add the heavy cream, Basli relish, and blend until smooth,
Serve hot, garnished with toasted walnuts, thyme and some olive oil.
Tip: I tried this recipe a few times, and what really worked for us was adding one tablespoon before blending and then another to get that nice texture from the onions and extra chilli kick!

Chilli Chutney Crostini with Burrata & Honey Drizzle (Using Filfli)
A simple yet flavourful appetiser with crispy bread, creamy burrata, and a touch of sweetness.
Ingredients:
1 baguette, sliced
2 tbsp Filfli chutney
1 ball burrata
1 tbsp honey
1 tbsp olive oil
Fresh basil for garnish
Instructions:
Toast the baguette slices until golden.
Spread a layer of Filfli chutney over each slice.
Top with torn burrata.
Drizzle with honey and olive oil. Garnish with basil.
Tip: Filfli chutney is spicy, so be careful how much you decide to spread on your crostini. If you like it hot, though, go for it! The spicy chutney plus creamy burrata, topped with the sweetness of the honey, is just amazing!

Spicy Orange Glazed Salmon (Using Xemxi)
A tangy, spicy glaze that turns salmon into a showstopper.
Ingredients:
2 salmon fillets
2 tbsp Xemxi orange jam
1 tbsp soy sauce
1 tsp grated ginger
1 tbsp olive oil
Salt & pepper
Sesame seeds & coriander for garnish
Instructions:
Mix Xemxi, soy sauce, ginger, and olive oil.
Brush over salmon and bake at 200°C for 12-15 minutes.
Garnish with sesame seeds and coriander.
Serve with some salad on the side.

Spicy Olive & Chilli Tapenade Martini (Using Buwġi)

Ingredients:
60ml gin or vodka
15ml dry vermouth
1 tsp Buwġi olive & chilli tapenade
2 green olives
Ice cubes
Instructions:
Shake gin, vermouth, and Buwġi tapenade with ice.
Strain into a chilled martini glass.
