How to make air-fryer sweet potatoes? We use our Cosori Air Fryer to give you the recipe.


Now I have to admit something before we start. Although I enjoy the sweet potato any day, I strongly prefer many other types of potato, even the common russet potato. On the other hand, Jon often asks for sweet potatoes instead of the potato we get with our meals.

That is why when I decided on the next recipe using our Cosori air-fryer, I decided to make this air-fryer sweet potatoes recipe for Jon. Quite honestly, I loved this as well.

You’d also appreciate that you can easily adapt this recipe to suit a vegan diet. The sweet potato is topped with Greek yoghurt and some fresh herbs. If you are catering for a vegan diet, you may choose a vegan cheese or coconut yoghurt, which both pair well.

For non-vegan or vegetarian diets, you might want to add some air-fried bacon topping! You can experiment as you see fit.

This Cosori Sweet potato is versatile enough to easily include your favourite additions. With little preparation time, these sweet potatoes will only need 40 minutes in the Cosori. Don’t forget to preheat the air fryer for 5 minutes while preparing the sweet potatoes.

Cosori Air Fryer Sweet Potatoes Greek yoghurt

Let’s get started.


Ingredients


3 medium to large sweet potatoes or 6 small sweet potatoes

3 tbsp Greek yoghurt

5 tsp olive oil

250g cheddar cheese

1 tbsp chopped rosemary

1 tbsp chopped thyme

2 pinches of salt

1 pinch of pepper

Pinch of garlic powder


Method


1. Preheat the Cosori using the preheat function for 5 minutes.

2. Properly clean the sweet potatoes under a tap and scrub properly. Lightly pat the sweet potatoes.

3. Pierce the sweet potato all around with a fork, approximately an inch apart.

4. Mix 3 teaspoons of olive oil, a pinch of salt, pepper, garlic powder, rosemary and thyme in a small bowl.

5. Brush (we used a pastry brush) the sweet potatoes with the olive oil and herb mix.

6. Place the sweet potatoes in the preheated Cosori basket.

7. Air fry the sweet potatoes at 200oC for 20 minutes on both sides (40 minutes in total).

8. Test the sweet potatoes with a knife or fork. They should be soft inside. You might need to air fry for longer to get the crunchy, golden exterior and soft interior.

9. Using tongs, place the air-fried sweet potatoes onto a board. After cooling for 10 minutes, slice the sweet potato in half.

10. Scoop out the insides and mash thoroughly.

11. Add any toppings. We added olive oil and salt.

12. Fill the sweet potatoes with the filling, and place the grated cheddar cheese on top.

13. Lightly spray the Cosori basket with olive oil. Place the sweet potatoes back into the basket and air-fry for a few minutes until the filling is hot and the exterior is crispy.

14. Plate and serve with a tablespoon of Greek yoghurt and dill.

This recipe is excellent for anyone who enjoys sweet potatoes and appreciates a crispy exterior. Leftovers are rare for this air-fryer sweet potatoes recipe, but should you have any, you can easily reheat them in the Cosori.


Set at a temperature of 180oC and cook for about 3 minutes. It is best if these are reheated without the Greek yoghurt topping.
